Missing the classic sub at game time but not the calories (or the bread bloat)? Meet Sub in a Tub – all the flavor of your favorite hoagie, none of the roll. It’s quick, totally customizable, and loaded with nutrients that keep you cheering long after kickoff. Perfect for tailgating.
Ingredients (Serves 4)
Salad Base
- 4 cups chopped romaine lettuce
- 1 cup grape tomatoes, halved
- ¼ cup thin‑sliced red onion
- ¼ cup sliced pepperoncini (jarred, drained)
- 4 oz provolone (or part‑skim mozzarella), cut into bite‑sized pieces
- 6 oz lean deli meats (turkey, ham, and reduced‑fat salami) rolled and sliced
Dressing
- 2 Tbsp extra‑virgin olive oil
- 1 Tbsp red wine vinegar
- ½ tsp dried oregano
- Pinch each of salt & pepper
Optional boosters: sliced black olives, banana peppers, shredded carrots, or a sprinkle of Parmesan.
Instructions
- Prep the Produce: Wash and dry lettuce, tomatoes, and onion. Pat pepperoncini dry to keep the salad crisp.
- Build the Base: In a large bowl or portable container, layer lettuce, tomatoes, onion, and pepperoncini.
- Add Protein & Cheese: Top with provolone pieces and rolled deli meat slices for balanced bites.
- Whisk the Dressing: In a small jar, shake together olive oil, red wine vinegar, oregano, salt, and pepper.
