  • ¼ cup almond flour

For the cheesecake filling:

  • 2 cups raw cashews, soaked at least 4 hours or overnight
  • ½ cup canned coconut milk (shaken)
  • ¼ cup coconut oil, melted & cooled
  • ⅓ cup pure maple syrup
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon vanilla extract (or 1 teaspoon vanilla bean powder)
  • 2 cups strawberries, halved

 

Instructions

  1. Prepare the pan: Line an 8×8″ pan with parchment paper and lightly grease with coconut oil.
  2. Make the crust: Add cashews, almond flour, dates, coconut oil, and salt to a blender or food processor. Blend until a sticky dough forms (be careful not to overblend). Press evenly into your prepared pan.
  3. Make the filling: In the same blender, combine all filling ingredients except strawberries. Blend until completely smooth. Adjust sweetness or tartness to taste.
  4. Assemble: Pour the filling over the crust and smooth the top. Tap the pan on the counter to release any air bubbles. Press strawberry halves gently into the surface.
  5. Freeze: Freeze for at least 3 hours or until firm. Run a knife under hot water before slicing for clean cuts. Let bars soften at room temperature for 10–15 minutes before serving.
  6. Store: Keep leftovers wrapped tightly in the freezer.
