At Aylo Health, we’re always looking for ways to encourage healthy eating, and this Chicken and White Bean Soup is a perfect, hearty meal to fuel your day. Packed with 35 grams of protein per serving, it’s not just delicious, but also nutritious. Here’s how you can make it at home.

Ingredients:
- 2 teaspoons extra-virgin olive oil
- 2 leeks (white and light green parts only), cut into 1/4-inch rounds
- 1 tablespoon chopped fresh sage (or 1/4 teaspoon dried)
- 2 (14-ounce) cans reduced-sodium chicken broth
- 2 cups water
- 1 (15-ounce) can cannellini beans, rinsed
- 1 (2-pound) rotisserie chicken (skin discarded, shredded)*
*We discard the chicken skin because it is high in saturated fat and we recommend always to check the ingredient label on your rotisserie chicken to make sure there isn’t too much sodium included as well.
Instructions:
Heat the Olive Oil
Start by heating 2 teaspoons of extra-virgin olive oil in a Dutch oven over medium-high heat.
Add Leeks for Flavor & Health
Toss in the leeks, which bring a subtle, savory flavor to the soup. Stir often for about 3 minutes until they soften.
Sage for Flavor & Antioxidants
Stir in 1 tablespoon of fresh sage or 1/4 teaspoon of dried sage. Let it cook for about 30 seconds to release its aroma.
Add Broth, Water & Beans
Pour in the reduced-sodium chicken broth and water, then turn the heat to high. Cover and bring the mixture to a boil.
Add Chicken for Protein Power
Once boiling, add the shredded rotisserie chicken. Stir everything together and let it simmer for about 3 minutes until heated through.
Serve & Enjoy
Ladle the soup into bowls and serve hot. It’s the perfect meal to warm you up on chilly fall days, and it’s loaded with nutrients to keep you energized and healthy.
