Back-to-School Breakfasts That Are Fast, Healthy, and Kid-Approved

In fact, it can take just 5 minutes or less. We rounded up two easy, protein-packed recipes that’ll fuel your family’s morning and support growing minds and bodies.
First up we have a 2-minute microwave omelet:
2-Minute Microwave Omelet:
Yes, really two minutes.
Ingredients:
- 2 eggs
- 2 tablespoons water
- Salt + pepper to taste
- Cooking spray
- Shredded cheese (1–2 tablespoons)
- Salsa (2 tablespoons)
Instructions:
- Whisk the eggs, water, salt, and pepper in a bowl. (The water makes it extra fluffy!)
- Spray a microwave-safe plate with cooking spray—choose one with a slight rim to prevent spills.
- Pour the egg mixture onto the plate and cover a microwave safe lid.
- Microwave for 2 minutes. It’ll puff up—that’s totally normal.
- Let it cool for 2–3 minutes, then top with cheese and salsa.
- Fold it in half like an omelet and serve.
Why it’s great:
Eggs are rich in protein, which supports muscle growth and keeps kids fuller longer. Salsa adds a flavorful boost of antioxidants. Plus, it’s an easy way to sneak in some veggies. You can also sneak in veggies by dicing them and adding them to the omelet for a colorful pop. Veggies like bell peppers and onions work well in omelets.

Chocolate Blueberry Overnight Granola
Perfect for prepping the night before, these oats are both delicious and loaded with nutrients.
Ingredients:
- ½ cup plain Greek or coconut yogurt
- ⅔ cup milk (any kind!)
- ⅔ cup granola
- 1 tablespoon cocoa powder
- ¼ teaspoon cinnamon
- A pinch of salt
- Large handful of blueberries
Instructions:
- Mix all ingredients in a bowl.
- Divide into two small jars or containers.
- Refrigerate overnight.
- Grab, stir, and enjoy in the morning!

The cocoa and blueberries add a little indulgence, while the granola and yogurt help keep blood sugar steady and provide long-lasting energy. You can totally customize the granola based on what is in season and what you have on hand. Sourcing some toppings and mix-ins from local farmers markets can help add flavor and key nutrients.
