Hanukkah is a time for cozy, flavorful foods, and these Brussels Sprout and Cranberry Latkes put a healthy, festive twist on the classic potato pancake. Crispy on the outside, tender on the inside, and bursting with seasonal flavor, they’re perfect for holiday gatherings or a special treat at home.
Ingredients
- ½ pound Brussels sprouts, shredded
- ¼ cup white onion, diced small
- 1 egg, whisked
- 1 tablespoon olive oil
- 1 teaspoon kosher salt (plus more for garnish)
- ¼ teaspoon red chili pepper flakes
- ⅓ cup dried cranberries
- 6 tablespoons all-purpose flour
- ¼–½ cup vegetable, canola, or grapeseed oil for frying
- Sour cream, for garnish, or substitute plain Greek Yogurt
How to Make It
- Mix the ingredients – In a large bowl, combine shredded Brussels sprouts, onion, egg, olive oil, cranberries, flour, chili flakes, and salt. Mix until well incorporated.
- Form the latkes – Shape the mixture into small patties, pressing gently to ensure they hold together.
- Fry until golden – Heat oil in a skillet over medium heat. Fry latkes in batches, about 3–4 minutes per side, until golden brown and crispy. Enjoying fried foods in moderation is perfectly fine, but if you’re looking for a lighter twist, you can also make these in an air fryer for a crisp, delicious result with less oil.
- Drain & season – Remove latkes from the skillet and blot excess oil with a paper towel. Sprinkle lightly with salt.
- Serve – Top with a dollop of sour cream for the perfect balance of creamy and crispy.
