  • 1 cup Raw Walnuts
  • 2 cups Pitted Dates
  • 1/4 cup Shredded Coconut

  • 2/3 cup Vegan Cane Sugar
  • 3 tablespoons Cornstarch
  • 2 cups Unsweetened Vanilla Almond Milk
  • 1 tablespoon Coconut Oil
  • 1 teaspoon Vanilla Extract
  • 2 tablespoons Blueberry or Strawberry Jam
  • 2 6-oz (about 1 & 1/2 cups) Fresh Blueberries

 

Instructions

  1. Add raw almonds, raw walnuts, dates, and shredded coconut to a food processor and blend until the mixture sticks together.
  2. Press the crust mixture firmly into a greased pan and set aside.
  3. In a pot, whisk together vegan cane sugar, cornstarch, and almond milk. Bring to a boil, then reduce the heat and stir continuously until thickened.
  4. Stir in coconut oil and vanilla until smooth and custard-like.
  5. Pour the filling evenly over the prepared crust and refrigerate until fully set.
  6. Once chilled, gently warm the strawberry jam and spread it over the top.
  7. Finish with fresh blueberries for a naturally sweet, patriotic touch.
