This Easter, skip the artificial food coloring and try a naturally delicious way to dye your eggs. Using beets not only gives your eggs a stunning pink hue but also provides a heart-healthy boost. Beets are high in nitrates, which convert to nitric oxide in your body, improving blood flow, lowering blood pressure, and supporting overall heart health. Remember to prep these 24 hours ahead of time because the natural dying process takes longer. Let’s get started!

Ingredients

For the brine:

  • 1 cup vinegar
  • 1 cup pickling liquid (from a jar of pickled beets)
  • 2 large onions, sliced
  • 1 tablespoon salt
  • 1 teaspoon mustard seeds
  • 1 teaspoon coriander seeds
  • 2 tablespoons sugar

For the eggs:

  • 6 hard-boiled eggs
  • 2-3 medium beets, peeled and sliced

Instructions

  1. Prepare the Brine
  2. In a medium saucepan, combine vinegar, pickling liquid, onions, salt, mustard seeds, coriander seeds, and sugar. Bring the mixture to a boil, stirring until everything is dissolved. Reduce the heat and let it simmer for 5 minutes to allow the flavors to meld.
  3. Pierce the Eggs
  4. Using a fork or toothpick, pierce each boiled egg about 6 times. This helps the eggs soak up the vibrant beet color and absorb the flavorful brine.
  5. Combine Eggs and Beets
  6. In a clean jar or container, layer the pierced eggs and sliced beets. Pour the brine over them, ensuring everything is fully submerged. Seal the jar tightly.
  7. Refrigerate
  8. Let the eggs and beets chill in the fridge for at least 24 hours. The longer they sit, the deeper the color and flavor will become.
  9. Serve and Enjoy
  10. When ready to serve, halve or quarter the eggs and pair them with some beets and onions from the jar. Drizzle a bit of the pickling liquid over the top for extra flavor. Marvel at the vibrant colors and enjoy this healthy Easter treat!
